Tortellini Soup

Although the recipe calls for Italian sausage, I have made it with andouille sausage as well. You can probably use any meat you have on hand. I have also skipped tomato sauce and used tomato paste with additional canned tomatoes and frozen garden tomatoes. It's pretty flexible for veggies too. Use what you have.

Ingredients

  • 1 lb mild bulk Italian sausage
  • 2 garlic cloves,minced
  • 1 cup water
  • 1 (14 oz) can diced tomatoes
  • 1/2 tsp basil
  • 1 (8 oz) can tomato sauce
  • 8 oz frozen tortellini
  • 1 cup chopped onion
  • 5 cups beef broth
  • 1 1/2 cups shredded zucchini
  • 1 cup grated carrots
  • 1/2 tsp oregano
  • 1 medium green pepper, chopped

Preparation

Step 1

Brown sausage and drain grease.

Place sausage, onions, garlic, broth, water, tomatoes, carrots, and tomato sauce in slow cooker.

Cover and cook on LOW for 6 hours.

Add basil, oregano, zucchini, green pepper, and tortellini to slow cooker.

Cover and cook for another hour on HIGH or until tortellini are done. Makes 8 servings.
