Biscotti, Cherry Almond Vanilla, Low Fat

1 large egg = 2 tbs = 1/8 cup
2 large eggs = 4 tbs = 1/4 cup

Ingredients
- 1 1/2 cups dried pitted cherries
- 2 tbs kirsch - I used 1 tsp almond extract + 5 tsp water
- 1 vanilla bean - used 2 tsp vanilla extract, mixed w/eggs
- 1 cup sugar
- 2 cups AP flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 2 eggs
- 2 egg whites
- 3/4 cup whole unblanched almonds, lightly toasted & coarsely chopped
- 1 egg white, lightly beaten

Preparation
Step 1
Preheat oven to 350
Sprinkle cherries w/kirsch, set aside
Slice vanilla bean into thin strips, process w/ 1/4 cup sugar about 1 minute (or mix vanilla extract w/eggs)
Mix: flour, vanilla sugar mix, sugar, baking powder, baking soda, salt
Add eggs & 2 egg whites, mix til just comes together
Stir in cherries w/kirsch, & almonds
Shape dough into 2 loaves, each approx 14 x 2
Flatten slightly & brush w/egg white
Bake 25 - 30 mins til firm to touch & lightly golden
Cool 10 mins
Reduce oven to 325
Slice each log on diagonal into 1/2" slices
Bake cut side down 10 mins each side
Let cool
