Ingredients
- Onion
- 1 clove garlic
- Swiss chard /spinach
- 15 oz ricotta
- 1 c mozzarella / Parmesan
- A little basil
- ¾ c peas
- S &p to taste

Preparation
Step 1
1. Chop onion really small and garlic – let it cook for a few minutes then add the Swiss chard or the spinach. In a food processor add the cheese, basil and peas and s&p – once the Swiss chard is cooked add to the food processor.
2. In a zip lock bag put in your filling and pipe into your manicotti – in a lightly buttered dish, line up the filled manicotti.
**Sauce**
3. Heat up ¾ c of milk + ½ c of heavy cream. To the warm milk add some fonteina cheese – on a really low heat melt your cheese. Add basil to this with 2 tablespoons of Parmesan.
4. Pour over manicotti top with shredded mozzarella bake at 400 for 30- 35 mins.
