Warm Gorgonzola Dressing

I had this at a bed and breakfast in Idyllwild and begged for the recipe!

Ingredients

• 1 tbls olive oil
• 2 tbls minced onion
• 1 tsp minced garlic
• 3/4 c heavy cream
• 1 c crumbled gorgonzola
• 4 tbls coarsely chopped tomatoes (roma)
• 1/2 c coarsely chopped bacon
• 1 head of iceburg lettuce

Preparation

Step 1

Heat oil, onion and garlic. When transparent, add heavy cream and gorgonzola. Whisk over medium heat until slightly reduced and creamy. Add tomatoes and pepper, cook for 1 more minute. Quarter head of lettuce and pour over dressing. Garnish with bacon and parsely.
