Grilled Flank Steak with Chimichurri Sauce 1 Picture

Ingredients

  • 12 ounces Skirt, Sirloin or beef flank steaks
  • 3 tablespoons red wine vinegar
  • 2 tablespoons water
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried red pepper flakes
  • 1/2 teaspoon freshly ground black pepper, coarsely ground
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup finely chopped fresh flat-leaf parsley
  • 1 bunch scallions
  • Pinto bean, optional
  • Flour tortilla, optional

Preparation

Step 1

For Chimichurri Sauce:
Mix the vinegar, water, garlic, salt, pepper flakes and black pepper. Whisk in olive oil. When well blended, whisk in parsley.

For Steak:
Preheat grill or grill pan on high. Season steak with salt and pepper and place it on hot grill. For medium rare, cook it for 3 - 4 minutes on each side. Trim roots from scallions and add entire bunch to the grill after the steak has just been flipped.
Cook scallions until lightly charred, about 4 - 5 minutes.

Drizzle the steak with the chimichurri sauce and serve with the grilled scallions and, if desired, a scoop of pinto beans and hot tortillas.
