This is a family favorite, one that is in my family, not from my other half's :). It was passed down from my grandmother, to my sister, hence it's name, and then to me.

Ingredients

  • 5 lb bag or red potatoes
  • 1 medium container of Helmmann's Mayonnaise
  • 2-3 carrots, grated
  • 1 Tbsp celery seed
  • Salt and black pepper to taste
  • 1 small onion, diced
  • 6 hard boiled eggs (3 sliced, 3 chopped)

Preparation

Step 1

Place the potatoes in a large stockpot and fill with enough cold water to cover. Bring pot to a boil over medium-heat heat and cook potatoes until almost cooked through, just a little give when tested with a knife inserted. Drain.
When the potatoes are cool enough to handle, peel and cut them into cubes and place in a large bowl.
Mix the carrots, onion and celery seed into the large bowl with the potatoes. Add half the jar of mayonnaise, mixing thoroughly, adding more as needed to a consistency that you desire.
Once the final addition of mayo is complete, add the eggs and fold gently to incorporate.
(If you like more celery seed, feel free to add more. When you're ready to serve, place the sliced eggs on top as a "garnish".
