Cheese Puffs, Smoked Cheddar

Ingredients
- Makes about 2 dozen
- 1 cup water
- 1/2 cup cold unsalted butter, cubed
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground black pepper
- 4 large eggs
- 1/4 cup shredded smoked Cheddar cheese

Preparation
Step 1
1. Preheat oven to 425°. Line baking sheets with parchment paper.
2. In a medium saucepan, bring 1 cup water and butter to a boil over medium heat. Remove from heat. Stir in flour, salt, and peppers. Return to heat. Cook, stirring vigorously, until mixture forms a ball, about 3 minutes. Remove from heat. Let cool 5 minutes.
3. In the bowl of a stand mixer fitted with the paddle attachment, place flour mixture. Beat on high speed 2 minutes. Add eggs, one at a time, beating well after each addition, stopping to scrape sides of bowl. Beat in cheese. Drop tablespoonfuls of dough 2 inches apart on prepared pans.
4. Bake until puffed and golden brown, about 17 minutes. Serve immediately.
