Spicy Shrimp Skewers

Ingredients
- 32 medium shrimp, peeled and deveined
- 16 wooden skewers
- Marinade
- 1/4 cup fresh lemon juice
- 1/4 cup reduced-sodium soy sauce
- 3 Tbsp. rice wine (mirin)
- 1 Tbsp. grated fresh ginger
- 3 scallions, minced
- 1 1/2 tsp. toasted sesame oil

Preparation
Step 1
In a bowl, combine the marinade ingredients, and add the shrimp. Cover and let marinate in the refrigerator for 2 hours.
Add the wooden skewers to a pan of warm water and let soak for 1 hour.
Preheat the oven broiler. Line a broiler tray with foil, and coat the foil with cooking spray.
Drain the shrimp from the marinade. Add the marinade to a saucepan and heat to boiling over high heat. Lower the heat and simmer. Thread four shrimp onto a pair of skewers (using two skewers together stabilizes the shrimp as they cook). Broil for 1-2 minutes per side. Add some of the reserved marinade to the shrimp, and broil for 1 more minute. Serve hot or at room temperature.
