Ingredients

  • 3 tbsp (45 mL) sun-dried tomato oil
  • 1 tbsp (15 mL) fresh garlic, chopped
  • 1/4 tsp (1 mL) chili flakes
  • 1 cup (250 mL) sun-dried tomatoes in oil, drained (reserve oil)
  • 2 cups (500 mL) canned diced tomatoes, drained of juices
  • 1/4 cup (50 mL) water
  • Salt

Preparation

Step 1

1 In a small saucepan heat oil over medium heat, add garlic and chili and sautée until fragrant, about 1 minute.

2 Add sun-dried tomatoes, diced tomatoes and water. Bring to the boil and then simmer for 15 minutes.

3 Let cool and purée with hand blender or stand-up blender.

4 Season generously with salt.




Makes 21/2 cups (625 mL)
