  • 8 oz. thin whole wheat spaghetti
  • 1 c. chopped green beans or asparagus
  • 1 c. julienned carrots
  • 1/2 c. bottled Asian peanut sauce
  • chopped peanuts
  • leftover chicken

Preparation

Step 1

Cook pasta according to package directions except add additional time so spaghetti is very soft. Reserve a few tablespoons of the pasta water. During the final 2 or 3 minutes of cooking, add the vegetables to the pot. When pasta and vegetables are done, immediately drain pasta mixture, and toss with the dressing. If desired add chopped peanuts and leftover chopped chicken to add protein.
