Ingredients
- 3/4 lb. trimmed green beans
- 1 1/2 Tbsp. olive oil
- 2 tsp. lemon juice
- 2 small shallots, peeled, halved, and thinly sliced
- 2 Tbsp. toasted slivered almonds (toast in a dry skillet over medium heat until light brown)
- 1/2 tsp. lemon zest
- Salt and pepper to taste

Step 1
Preheat the oven to 425°F. Toss the green beans with the oil, lemon juice, and shallots. Place in a single layer on a baking sheet or baking pan.
Roast for about 15 minutes until greens beans are tender but crisp.
Combine the almonds, lemon zest, and salt and pepper to taste. Sprinkle over the green beans and serve.
