Ingredients

  • Mozzarella:
  • 12 Mozzarella balls or Mozzarella cut into 1/4 slices
  • 1/4 cup white wine vinegar
  • 2/3 cup olive oil
  • 2 garlic cloves, minced
  • 1/3 cup fresh basil
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp ground pepper
  • Roasted peppers
  • 2 ripe red tomatoes
  • 2 ripe yellow tomatoes
  • 1 tsp fresh basil

Step 1

Place Mozzarella balls in a jar. Add vinegar, oil, garlic herbs and pepper and stir. Cover and refrigerate. Stir for 2-3 days. Arrange pepper strips and tomatoes. Put mozzarella on platter. Strain marinade and drizzle 1/4 cup over veggies. Garnish with chopped basil and serve with bruschetta or bread.
