Ingredients

  • 1 1/2 lb broccoli
  • 1/2 medium onion, cut into wedges and separated
  • 3/4 lb sirloin beef
  • 3 tbsp peanut oil
  • 1/2 tsp salt
  • 1 tbsp cooking wine
  • 3 tbsp water
  • 3 tbsp cornstarch
  • 1 egg
  • 2 1/2 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • 3/4 tbsp dark soy sauce
  • 1 tbsp sugar
  • a few drops of sesame oil
  • 1 clove garlic, crushed
  • 1/2 cup chicken broth or beef broth

Preparation

Step 1

Marinate beef for 1 to 2 hours prior to cooking. Beef should be sliced thinly in bite-sized pieces. Marinate with egg, salt, cooking wine, water and 1 tbsp cornstarch. Wait 1/2 hour, then add 1 1/2 tbsp of oil to the beef and mix thoroughly.

Heat 1 1/2 tbsp oil in wok. Cook beef until 95 per cent cooked, then remove from wok. Add 1 1/2 tbsp oil and stir-fry broccoli and onions. Remove from wok.

Heat wok again with 1 1/2 tbsp oil and crushed garlic. Then put vegetables and beef in and stir fry. Then add rest of ingredients and thicken with remaining cornstarch.
