Ingredients
- Cookies:
- 1 1/4 cups flour
- 3/4 cup butter, softened
- 1/2 cup cornstarch
- 1/3 cup powered sugar
- 1 TB lemon juice
- 1 tsp lemon zest
- Frosting:
- 3/4 cup powdered sugar
- 1/4 cup butter, softened
- 1 tsp lemon zest
- 1 TB lemon juice

Preparation
Step 1
In a large bowl, combine all cookie ingredients. Beat on low, scraping bowl often, until well mixed, about 2-3 minutes. Divide dough in half. Shape each half into an 8x1 inch roll. Wrap in plastic wrap. Refrigerate until firm (about 1-2 hours.)
Preheat oven to 350. Cut each roll into 1/4 inch slices. Place 2" apart on cookie sheets. Bake 8-12 minutes. Cookies will not brown. Cool completely.
In a small bowl, combine all frosting ingredients. Beat on medium, scraping bowl often, until fluffy, about 1-2 minutes. Frost cooled cookies.
