Ingredients

  • 1 cup strawberries, halved
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup powdered sugar
  • 1 lemon, zested and juiced
  • 3 cups ricotta

Preparation

Step 1

Combine berries in a medium pan over low heat. Add 1/2 cup sugar and lemon juice. Simmer for 7-10 minutes to allow berries to macerate. Set aside.

Combine remaining sugar, lemon zest and ricotta in food processor. Process until light and fluffy.

Spoon ricotta into glasses and top with berry compote. Serve immediately.
