  • Lilikoi Pineapple BBQ Sauce:
  • 5 lb pork butt
  • 2 1/2 tablespoons Hawaiian salt (or sea salt)
  • 2 tablespoons liquid smoke
  • 1 large banana leaf
  • 1/12 cup cider vinegar
  • 1 cup pineapple juice
  • 1 cup ketchup
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons brown sugar
  • 2 teaspoons liquid smoke
  • 2 teaspoons Worcestershire sauce
  • 3/4 teaspoon cayenne pepper
  • 1 1/2 cups Lilikoi juice (or passion fruit juice)

Preparation

Step 1

Pre-heat your oven to 325 degrees F or 160 degrees C.

Cut long and shallow cuts into the pork butt. Rub the liquid smoke and salt into the pork.

Use the banana leaf to wrap the pork around. Secure it with kitchen twine and then repeat with foil.

Pour about an inch of water into a roasting pan. Roast the pork for about 3 1/2 hours (or 45 minutes for each pound).

Shred the pork with forks and mix it into the BBQ sauce. Scoop on Hawaiian taro rolls or sweet bread, with a side of coleslaw.

Lilikoi Pineapple BBQ Sauce:
Set aside the lilikoi juice.


Mix all ingredients together in a saucepan. Whisk mixture and boil until the sauce achieves thickness. Lower the heat and simmer for about 20 minutes.

Pour in the lilikoi juice and reduce to 2 cups.
