Ingredients

  • 1 cup sugar
  • 1 cup oil
  • 3 eggs
  • 1 cup grated nuts (optional) You can also substitute for semi-sweet chocolate chips—very good!
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • Vanilla and almond extracts— I use vanilla but you can use both

Preparation

Step 1

Mix the first 3 ingredients. Add vanilla and/or almond extract.
Gradually add the flour and baking powder. Add the nuts or chocolate chips by using a wooden spoon. Do not mix these in with a cuisinart or electric hand mixer. Grease your hands and pat them into loaves.
Bake at 3:50 until golden brown. Take them out of the oven and slice them and turn the slices on their sides. Turn off the oven, but return the pan to the oven until the mandel-bread are golden brown.
