  • 9 eggs
  • 1 1/2 cups sugar
  • 1 cup potato starch less 2 level tablespoons
  • 2 tablespoons of cake meal
  • Juice and rind of 1 lemon

Preparation

Step 1

Beat egg whites stiff. Add beaten yolks, sugar, lemon, potato starch and cake meal. Con-tinue beating until smooth and combined. Bake in a greased angel cake pan at 350 degrees until toothpick comes out dry. Start testing cake after 30 minutes.
