This is my aunt's recipe for freezing fresh green beans.

  • 1 pound Fresh Green Beans (3 cups of fresh green beans that have been trimmed - the tips have been broken off)
  • Ice Bath

Step 1

Trim the ends off of the green beans. Place the trimmed green beans in a strainer; Rinse with cold water. Add cold water to a dutch oven pot and bring to a boil. Once the water is boiling, add 1 pound of green beans and cover; Boil for 3 minutes. **Note: The water does NOT have to come back up to a boil. Only cook for a total of 3 minutes. Immediately remove the green beans from the water and submerge in an ice bath to cool. Remove the beans from the ice bath, allowing the excess water to drip off, and place them in a freezer bag. Freeze until ready to heat.

*Allow the water to come back up to a rolling boil between green bean batches.
