Ingredients

  • 2/3 cup flour
  • 4 eggs
  • 1 cup skim milk
  • 1/2 teaspoon salt
  • 3 apples, cored, peeled & sliced
  • 1/4 cup lemon juice
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 2 tablespoons dark brown sugar
  • warmed maple syrup

Preparation

Step 1

1. Mix together eggs-salt.

2. Toss apples with 2 tbs lemon juice.

3. Melt butter in 13X9" baking dish in 425 oven.

4. Remove dish and spread apples evenly over bottom. Return to oven until butter sizzles, then take out and pour batter over apples. Mix brown sugar and cinnamon, sprinkle over batter.

5. Bake 20 mins, until puffed and browned. Remove from oven, drizzle with lemon juice. Serve with syrup.

Wanted to try something different for breakfast and wanted to use apples we'd picked over the weekend - this was great - very healthy and delicious on a chilly morning. Cut the recipe by about 1/3 and made in a pie pan, cut the butter down to 1 tbsp and the sugar down to about 2 tbsp - really delicious and would definitely make again.
Recipe is written with my changes - original called for 6 eggs, 1/4 cup sugar, and 4 tbs butter. Added some cinnamon into the batter.
