Ingredients
- 2 tsp dark sesame oil
- 3 garlic cloves, peeled and minced
- 1 lb skinless, boneless chicken breasts, cut into thin strips
- 1 Tbsp sesame seeds
- 1/3 cup sliced dried apricots
- 1/2 cup water
- 1/2 cup apricot preserves
- 1 Tbsp reduced-sodium soy sauce
- 1 Tbsp dijon -style mustard
- 1/2 tsp grated fresh ginger
- 1/2 lb snow peas, ends trimmed

In a large nonstick frying pan over medium heat, heat the oil. Add the garlic and saute for 1 minute. Add the chicken and saute until browned and no longer pink in the center, about 5 minutes.
Add the sesame seeds and saute, stirring frequently, until browned, about 2 minutes. Add the apricots, water, apricot preserves, soy suace, mustard, and ginger and bring to a boil. Reduce the heat to low and simmer for 5 minutes. Add the snow peas and simmer until tender-crisp, about 5 minutes more.
