Ingredients

  • 1 c. butter , softened
  • 1 c. sugar
  • 1 egg yolk
  • 1 tsp. rum, or 1/2 tsp. rum flavoring
  • 1/2 tsp. vanilla extract
  • 2 1/4 c. sifted cake flour
  • 1/2 tsp. salt
  • 42 about 42 pecan halves

Preparation

Step 1

Beat butter at medium speed of an electric mixer until creamy; gradually add sugar, beating well. Add egg yolk, rum, and vanilla; beat well. Combine flour and salt in a bowl; gradually add to butter mixture, beating well. Cover and chill at least 2 hours or until firm.

Preheat oven to 350 degrees. Shape dough into 1" balls; place 2" apart on ungreased baking sheets. Press one pecan half into each cookie.

Bake 12-14 minutes or until edges are lightly browned. Cool 2 minutes on baking sheets; remove to wire racks, and cool completely.
