Ingredients
- 5 lb. potatoes
- 1/2 stick butter
- 1 small onion, finely chopped
- 2 c. chopped celery
- 2 c. finely chopped carrots
- 1/3 c. flour
- 1 large can evaporated milk
- 4 chicken bouillon cubes
- 4 c. water
- 4 c. milk
- basil, salt and pepper, to taste
- 1 pkg. cheese mix from macaroni and cheese

Preparation
Step 1
In a large saucepan, completely cover unpeeled potatoes with water and boil until tender. Peel and cut into cubes. Melt butter in large saucepan. Add onion, celery, and carrots and saute until tender. Add flour and stir until smooth. Gradually add evaporated milk and bouillon. Add water. Add potatoes and milk. Sprinkle with basil until top is covered. Add salt and pepper to taste. Bring to a boil. Reduce heat and simmer until ready to serve.
