Quick-and-Easy Cheese Blintz Casserole

Ingredients
- 4 large eggs
- 1 1/4 cups skim milk
- 2 tablespoons light sour cream
- 1/4 cup butter, melted
- 3/4 teaspoon vanilla extract
- 1 1/3 cups flour, preferably unbleached
- 2 tablespoons sugar
- 1 1/4 teaspoons baking powder
- 2 packages farmer's cheese (8 ounce) (about 1 pound)
- 1 container lowfat ricotta cheese (16 ounce)
- 2 large eggs
- 3 tablespoons sugar
- 1 1/2 tablespoons lemon juice
- To Serve: sour cream, plain or vanilla yogurt, applesauce

Preparation
Step 1
1. Heat oven to 350.
2. Puree eggs-baking powder until very smooth. Pour 1 1/2 cups into bottom of a sprayed 9x13" baking dish. Bake 10 mins or until set.
3. Combine cheese-lemon juice, spread over bottom layer. Give the remaining batter a brief stir; then very slowly pour it over the cheese to completely cover.
4. Carefully return to the oven, bake 35-40 mins, or until the top is puffed and set. Let rest 10-15 mins. Serve with accompaniments.
So, so easy! All the taste of a blintz without all the work - definite repeater - will make over and over again. Not too sweet - just perfect. Next time will add cinnamon. If no farmer's cheese would use cottage cheese, but liked the texture of the farmer's cheese a lot. Used all lowfat ingredients.
