Ingredients
- 2 lb.. stew meat
- 6 to 7 medium potatoes cut into 1 1/2" pieces
- 2 medium onions, cut into wedges
- 8 medium carrots, cut into 1" pieces
- 4 to 5 celery ribs, cut into 1" pieces
- 1 4-oz. can sliced mushrooms, drained
- 1/3 cup quick cooking tapioca
- 1 beef bouillon cube
- 1 tsp. sugar
- 2 bay leaves
- 1 1/2 tsp. dried thyme
- 3 cups Spicy V-8 juice

Preparation
Step 1
In a 4 quart Dutch oven, or baking dish layer in order, stew meat, potatoes, onions, carrots, celery, mushrooms, tapioca, salt, bouillon, sugar, bay leaves, and thyme. Pour V-8 over all, and DO NOT STIR. Cover and bake, stirring occasionally in 325° oven for 3 hours.
