Ingredients

  • 1 1/2 cups pecan halves and pieces
  • 1 (14.1 oz.) package pie crusts
  • 1 cup semi-sweet chocolate morsels
  • 1/2 cup whipping cream, divided
  • 1 (8 oz.) package cream cheese, softened
  • 1 cup sugar, divided
  • 1 large egg
  • 28 caramels
  • 1/4 cup butter
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1/4 tsp salt

Step 1

1. Preheat oven to 350 degrees. Bake pecans in a shallow pan for 8 to 10 minutes or until toasted. Cool completely and increase oven temperature to 425 degrees.

2. Put pie crust in 10-inch pie plate. Bake for 12 minutes. Cool completely. Reduce oven to 350 degrees.

3. Microwave chocolate morsels and 1/4 cup cream for 1 minute or until smooth, stirring at intervals.

4. Beat cream cheese and 1/4 cup sugar until smooth. Add 1 egg, beating on low until blended. Add chocolate mixture beating until blended. Spoon into prepared crust.

5. Microwave caramels, butter and remaining 1/4 cream in large bowl until smooth, stirring at intervals. Whisk together 2 eggs, vanilla, salt and remaining 3/4 cup sugar. Whisk into caramel mixture until blended. Stir in pecans and spoon over chocolate mixture in prepared crust.

6. Bake for 55 minutes until center is almost set. Cool completely.
