Ingredients
- firm tofu - crumbled into small bits
- oil
- onion-finely chopped
- garlic-minced
- tumeric
- sea salt
- black pepper
- rosemary, finely minced
- cayenne-pinch
- shoyu
- lemon juice
- vinegar
- mustard (pref dijon)
- garlic powder
- baby spinach
- peppers, chopped
- veggies, as desired-for ex: chopped carrots, zucchini

Preparation
Step 1
Crumble tofu w/hands til small bits
Heat oil, saute onion & garlic, add veggies as desired.
Combine & cook in second lightly oiled pan: tofu, tumeric, salt, black pepper, rosemary, pinch cayene, shoyu, lemon juice, vinegar, mustard, pinch garlic powder; scramble & cook til tofu yellow from tumeric & mixture is hot.
Add sauteed onions & garlic, spinach, chopped peppers or veggies as desired
OPT: process tofu mixture in food processor w/arrowroot for firmer texture
