Ingredients

  • 4 cups chicken stock
  • 1 can (6 oz) tomato paste
  • 1 small head cabbage, shredded (about 1 1/2 lb)
  • 1 can (15/5 oz) great norther beans, rinsed and drained
  • 4 celery ribs, chopped
  • 2 large carrots, chopped
  • 1 small onion, chopped
  • 2 fresh thyme sprigs
  • 1 bay leaf
  • 2 garlic cloves, minced
  • 1/2 tea. salt
  • shredded Parmesan, optional

Step 1

In a 5-6 qt. slow cooker, whisk stock and tomato paste until blended; add cabbage, beans, celery, carrots, onion, thyme, bay leaf, garlic and salt. Cook, covered, on low 6-8 hours or until vegetables are tender.

Remove thyme sprigs and bay leaf. If desired, top each serving with cheese.
