Easy Cheddar Garlic Drop Biscuits

These fluffy cheesy biscuits are every bit as good as the seafood restaurant's that made them famous. This easy peasy recipe starts with a packaged baking mix, and they're drop biscuits so there's no floury mess to clean up afterward. Great with any kind of meal that you may serve, or like now, right by itself! They're even good at room temperature.

Ingredients
- Garlic Butter for brushing on biscuits:
- 2 1/2 cups all-purpose baking mix (such as Bisquick)(I used Great Value brand)
- 1/2 stick (1/4 c) cold salted butter
- 1 cup cheddar cheese, shredded (I hand shredded half an 8-oz block of mild cheddar)
- 3/4 cup milk (I used 2%)
- 1/8 - 1/4 teaspoon garlic powder
- Pinch of cayenne pepper, optional
- 2 Tablespoons salted butter
- 1/4 teaspoon garlic salt
- 1/2 teaspoon dried parsley flakes

Step 1
Preheat oven to 450° F. Lightly grease or line a baking sheet with parchment paper and set aside.
In a medium mixing bowl, use a pastry cutter to cut the butter into the baking mix until there are small chunks of butter about the size of peas. Stir in the cheddar cheese and garlic powder. Using a large fork or spoon, lightly stir mixture together while drizzling in the milk, only until the mixture is combined. Do not overmix as it will result in tough biscuits.
Drop 1/3 cup portions of the dough onto the baking sheet (I used an ice cream scoop).
Bake for 12-14 minutes, or until the tops of biscuits are beginning to lightly brown.
Make the Garlic Butter while the biscuits are baking by melting butter is a small bowl in the microwave. Stir in garlic salt and parsley.
When biscuits are done, use a brush to spread the Garlic Butter over the tops of the biscuits.
If desired, sprinkle a little kosher salt on the top of the biscuits.
