Ingredients
- 1 tea. olive oil
- 1 small onion chopped
- 1 small fresh poblano or Anaheim chile, chopped
- 4 garlic cloves, minced
- 1 tea. cumin
- 6 ears corn, grated from cob
- 1 3/4 cup chicken broth
- chopped fresh cilantro
- juice from 1 lime
- freshly ground pepper

Preparation
Step 1
Preheat saucepan; add oil. Saute onion, chile, garlic and cumin until onion is tender. Add corn and chicken broth to pot. Simmer, covered, until corn is tender. Transfer mixture to blender to puree. Return to pot; stir to heat through. Add lime juice and season to taste with pepper. Serve, garnished with cilantro.
