- 1 2lb pumpkin (can substitute butternut squash)
- 1/4 teaspoon salt
- 1 Tablespoon pepper
- 1 Tablespoon butter
- 1/3 cup grated Parmesan cheese

Step 1
Preheat oven to 250F
Halve pumpkin and discard seeds and fibers. Peel it and cut into large cubes (about 8 cups).
Peel 2 onions and crush garlic cloves. Put the pumpkin, onions and garlic into a Dutch oven. Season with salt and olive oil. Cover and bake for 4 hours.
Remove from oven and discard garlic cloves. Grind remainder up in food processor then pour into a shallow dish. Melt butter in a saucepan. Sprinkle puree with cheese then drizzle butter on top. Brown dish under broiler until bubbly and serve.
