Ingredients
- 4 (6-oz) bone-in-center-cut pork chops
- 1/2 tsp salt, divided
- 1/4 ground black pepper
- cooking spray
- 1 TBL butter
- 2 TBL finely chopped shallots
- 1/4 C chicken broth
- 2 TBL dijon mustard
- 2 TBL maple syrup
- 2 TBL chopped fresh flat leaf parsley

Preparation
Step 1
sprinkle both sides of pork w/ 1/4 tsp S & P
heat lg. skillet over med-high heat
coat pan w/ cooking spray
add pork to pan
cook 3 min on each side or until cooked through, but w/ slight blush in center
remove from pan
keep warm
return pan to med-high heat
add butter to pan, swirling pan to coat
add shallots
saute 3 min or until tender & translucent
add broth
bring to boil - cook 1 min
stir in mustard, syrup & remaining 1/4 tsp salt
cook 1 min or until slightly thick
return pork to pan
cook pork 1 min on each side or until thoroughly heated (be careful not to overcook pork)
serve pork w/ sauce
garnish each serving w/ 1-1/2 tsp parsley
