Ingredients
- 1 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1 egg
- 2/3 cup lowfat buttermilk
- 1/4 cup butter, melted
- 1/4 cup seedless raspberry spreadable fruit
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon

Step 1
1. Combine flour-cinnamon. Make a well in the center. Combine egg, buttermilk and butter. Stir into flour just until moistened
2. Spoon about 1 tb batter into each of 9 sprayed muffin cups. Top with 1 tsp preserves, then top with rest of batter. Combine cinnamon and sugar, sprinkle over batter. Bake at 400 20 mins, until done. Cool on a wire rack.
