Ingredients
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- S & P
- 4 center-cut tenderloin steaks, abt 1" thick
- 1 TBL vegie oil
- 2 garlic cloves, peeled & halved
- 1/4 C white wine
- 5 TBL unsalted cold butter, cut into pieces
- 1 tBL heavy cream
- 1 TBL chopped fresh basil
- 1 TBL chopped fresh oregano

Preparation
Step 1
SEAR MEAT:
combine dried oregano, garlic powder, 1/2 tsp salt & 1/2 tsp pepper in sm. bowl
pat steaks dry w/ paper towels & rub all over oregano mixture
heat oil in lg. skillet over med high heat until just smoking
cook steaks until well browned, 3-5 min per side
transfer to serving platter & tent w/ foil
MAKE SAUCE:
add garlic cloves to empty skillet
cook until fragrant - abt 30 seconds
stir in wine, scrapping up any browned bits
cook until reduced to abt 1TBL , abt 1 min
whisk in butter, cream, basil & fresh oregano
cook abt. 1 min
discard garlic
season w/ S & P
pour sauce over meat
serve
