COD****Roast Cod with Garlic Butter

21/11/15 - Great for both. I served it over my spaghettini with garlic and bread crumbs - great combo but this would also work on its own I'm sure.

Ingredients
- BUTTER: (8 servings)
- 1/4 cup unsalted butter, softened
- 1 1/2 tablespoons chopped flat-leaf parsley
- 1 large garlic clove, peeled and minced
- 2 teaspoons minced shallots
- 1/2 teaspoon Dijon mustard
- 1 1/2 tablespoons minced prosciutto di Parma (1 slice)
- 1 tablespoon all-purpose flour
- 2 tablespoons freshly squeezed lemon juice, plus grated zest
- Salt, to taste
- Freshly ground pepper, to taste
- 1/2 tablespoon olive oil
- 1 (6-ounce) skinless cod fillet, halved
- Garnish: lemon wedges

Step 1
Stir together first 10 ingredients in a small bowl. (I did it by hand the first time but it was not easy and very tough to cut once rolled even though chilled - try mini food processor next time) Roll into a small log with parchment paper and refrigerate until cold. Once cold, remove from fridge, slice into 8 pieces and store on parchment in a zip-lock bag in the freezer for future use.
Heat oil in a wide, deep, ovenproof skillet over medium-high heat. Season the cod fillets with salt and pepper, and cook 4 minutes. Turn fillets over; cook 1 minute.
Top each fillet with one of the butter slices; transfer skillet to oven, and bake at 450° for 2 - 3 minutes or until fish is just cooked through and opaque in the center. (Time all steps for best result)
Serve immediately.
