Ingredients
- 1 1 1 Tablespoon olive oil
- 1 1/2 1 1/2 1/2 cups chopped onion
- 1 1 1 teaspoon kosher salt
- 4 4 4 teaspoons minced garlic
- 1 1 1 jalapeno, seeded and minced
- 1 1 1 teaspoon ancho chili powder
- 6 6 6 cups chicken broth
- 1 15 1 15 1 15 ounce can fire roasted tomatoes, drained
- 2 15 2 15 2 15 ounce cans black beans, rinsed, drained
- 4 4 4 cups shredded cooked turkey
- 1/3 1/3 1/3 cup fresh lime juice
- 1/2 1/2 1/2 cup chopped cilantro
- 4-Cheese, Toppings: Shredded Cheddar or Mexican 4-Cheese, Sour Cream, Tortilla Chips, Lime Wedges

Heat olive oil in a large soup pot set over medium heat. Add onion and salt and cook for 5-10 minutes or until onion is softened. Add garlic, jalapeno, and ancho chili powder and cook for 1 minute. Add broth, tomatoes, black beans, turkey and lime juice. Bring to a simmer and cook for 10-15 minutes for flavors to meld. Stir in cilantro and serve topped with optional garnishes.
