Ingredients
- 5 pounds beef brisket
- 6 celery stalks, cut in half
- 1 large can tomatoes (32 oz.)
- 6 carrots, peeled and cut in half
- 12 large potatoes, peeled and cut in hhalf salt and pepper to taste

Step 1
Preheat oven to 450 degrees.
Place the meat in a roasting pan. roast in the 450 degree oven for 1 hour.
Remove from oven and place the roast in a large stockpot.
Add water to cover.Bring to a boil and set at low boil for 1 1/2- 2 hohours add the vegetables and reduce the heat to simmer. Let simmer for 35 minutes, or until meat is fork tender and the potatoes are cooked.
Remove meat from the pot. Let cool for 5-7 minutes. Slice meat 1/4-inch thick. Serve with vegetables and sauce.
