Ingredients

  • 1 lb ground beef
  • 2 scallioms, chopped
  • 1 Cup Tortilla chips crushed
  • 1/4 Cup chopped fresh cilantro
  • 1/4 tsp ground cumin
  • Kosher salt & pepper
  • 3 Cups mild jarred salsa (about 1 1/2 16oz jars)
  • 1 avocado, cut into pieces

Preparation

Step 1

Heat broiler. In a bowl, com bine beef, sallions, tortilla chips, cilantro, cumin, salt & pepper. Shape the mixture into 1-inch balls (about 24)& place on a broilerproff baking sheet. broil until beginning to brown, 5-6 min. Meanwhile, in a blender, puree the salsa with 1 cup water. Transfer to a large saucepan, add 2 cups water & bring to a boil. Add the meatballs, reduce heat & simmer until cooked through, 2-4 min. Serve soup with the avocado, cilantro & rotilla chips, if desired.
