Ingredients

  • 1 cup each unprocessed wheat bran and all purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup plain low fat yogurt
  • 1/4 cup butter, melted and cooled
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup fresh or unthawed frozen blueberries

Step 1

Preheat oven to 400 degrees. Spray a 12 cup muffin tin with nonstick spray. Combine in a large bowl, wheat bran, all purpose flour, sugar, baking powder, baking soda, cinnamon and salt.

Whisk together in a medium bowl, yogurt, butter, egg and vanilla extract. Add the mixture to the bran mixture, stirring just until blended. Gently fold in blue berries.

Spoon batter into the cups, filling each cup about 2/3 full. Bake until a toothpick inserted into a muffin center comes out clean, 18-20 min. Transfer the muffins from the pan to a rack. Serve warm or let cool completely.
