Ingredients

  • oil for pans
  • 2 c white spelt flour
  • 1 t salt
  • 2 t baking soda
  • 2/3 c butter (lt olive oil)
  • 1 c turbinado sugar
  • 1.5 c fruit
  • 3 eggs, beaten
  • 1/2 c chopped walnuts

Preparation

Step 1

Preheat oven to 350 degrees.
Prepare pans, skip oil if they're nonstick; use paper liners.
Mix all dry ingredients in one bowl & all wet ingredients in another.
Blend together & all walnuts for the last few turns with the spoon.
Don't over mix the batter.
Fill prepared pans 3/4 full.
Bake 25 - 30 minutes or until a toothpick comes out clean.
Let cool on rack.
