Flounder in Brown Butter-Caper Sauce

Asparagus & potatoes can be bought @ WFM. (Or make w/fish.) Make flounder recipe. After dinner, serve up some angel food cake w/something refreshing like fruit or decadent like whipped cream.

Ingredients

  • 2 T canola oil
  • 4 (5oz) skinless flounder, fluke or sole fillets
  • Salt & freshly ground black pepper
  • 1/3 c flour
  • 4 T good-quality butter
  • 2.5 T capers, coarsely chopped
  • 2 t lemon juice
  • 3 T chopped flat-leaf parsley

Preparation

Step 1

Heat canola oil in a lg nonstick skillet over med heat. Sprinkle flounder generously w/salt & pepper. Place flour on a small plate, dredge 2 fillets in flour, & add to pan. Cook, turning 1x w/a spatula, until lightly browned, 2-3 min per side. Transfer fillets to a plate, cover w/foil & keep warm. Repeat w/remaining fillets.

After the fish has cooked, wipe out skillet & return it to med-high; have ready capers, lemon juice & parsley. Add butter to skillet & cook, swirling pan frequently, until butter turns light brown & smells nutty, ~4 min. Immediately stir in capers, lemon juice & parsley; as soon as sauce boils, pour over fish & serve.
