  • 12 ounces turkey sausage, crumbled
  • 1 small onion, chopped
  • 1 10 ounce box frozen spinach, thawed
  • 2 tomatoes, chopped
  • 32 ounces egg whites
  • 1 cup low fat cheddar cheese, grated

Preparation

Step 1

Directions:

: Squeeze the box of spinach over the sink to remove the liquid. Place a bed of paper towels onto a plate. Coat a casserole dish with a light layer of cooking spray.

: Preheat an oven to 350 degrees. Place the sausage in a skillet over medium heat. Cook for about 10 minutes, or until the sausage is browned. Using a slotted spoon, transfer the sausage to the plate with the paper towels.

: Add the chopped onion to the pan and cook in the sausage fat for about 5 minutes, or until it begins to become soft and fragrant. Add the drained spinach to the pan, stir to incorporate it with the onion.

: Transfer the sausage back to the pan. Add the tomatoes, stir and cook for another 2-3 minutes.

: Pour the meat tomato spinach mixture to the prepared casserole dish. Pour the egg whites over the meat tomato spinach mixture.
Sprinkle the grated cheddar cheese to top the casserole.

Bake for about 1 hour, or until the cheese has browned and the egg whites stop bubbling. Cool for 10-15 minutes, cut into 8 wedges and enjoy!
