Ingredients
- 5 lbs tomatoes, quartered
- 6 cloves garlic, mashed
- 1/4 c. olive oil
- Preheat oven to 450. Place above ingredients in 9x13 casserole dish, toss, then bake for 40 minutes.

Step 1
Meanwhile Sauté in 2 T. olive oil: 1 cup chopped onion. Then add,
2 c. water
2 t. sugar
1/2 t. salt and 1/4 t. pepper flakes
Bring this to a boil; add roasted tomatoes and simmer for 10 minutes.
Now purée in a blender until smooth! Serve with fresh chopped basil on top!
