Ingredients

  • 1 c water
  • 2 c sugar
  • 1 mango, peeled & cut into chunks
  • 1.25 c grapefruit juice, about 2 grapefruits

Preparation

Step 1

1. Place water & sugar in a heavy saucepan.
2. Stir over med-high heat to thoroughly dissolve the sugar.
3. Bring syrup to boil, then remove from heat & cool completely. (To speed cooling, pour syrup into a bowl & set the bowl in a larger bowl filled w/ice water.)
4. place mango in blender & process until smooth.
5. Pour in grapefruit juice & blend to mix well.
6. Add about 1c of cooled syrup to fruit puree, 1/4c @ a time, to desired sweetness.
7. Pour fruit puree into Popsicle molds or ice cube trays & freeze until partially frozen, insert wooden sticks in center of Popsicles & freeze until firm.
