Ingredients

  • (Ingredients for two)
  • 1/2 teaspoon olive oil
  • 2/3 cup chopped onion
  • 2 cloves garlic, minced
  • 4 tablespoons red wine
  • 2 teaspoon white sugar
  • 2 teaspoon chopped fresh basil
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 2 teaspoon lemon juice
  • 1 teaspoon Italian seasoning (oregano)
  • 1 teaspoon ground black pepper
  • 1 (28 ounce) can peeled and diced tomatoes
  • several roasted red peppers (jar w water)
  • 2 teaspoons chopped fresh parsley
  • protein
  • 1 boneless, skinless chicken breast cut up into small cubes
  • 2 hot italian sausages (uncooked) casing removed and cut into coins

Preparation

Step 1

1.) Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
2.) Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil.
3.) Reduce heat to medium, and simmer uncovered about 2 hours.
4.) Saute chicken until cooked and add to sauce
5.) saute sausage until cooked and add to sauce
6.) allow to simmer for as much of the two hours as possible
7.) Ladle over the hot cooked pasta of your choice.
