Thanksgiving Red Cabbage

Ingredients
- 1 head red cabbage 1 1/2 lbs.
- 4 slices bacon, diced
- 1/4 cup brown sugar
- 2 Tbs. flour
- 1/2 cup water
- 1/4 cup vinegar
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 small onion, sliced
- 2 tart apples, peeled and chopped
- pinch caraway seeds

Preparation
Step 1
Heat 1/2 inch water, 2 Tbs. vinegar, and 1/2 tsp. salt to boiling. Add 5 cups shredded red cabbage, onion, and chopped apple. Cover and boil until crisp tender, about 10 minutes. Drain.
Prepare cabbage. Fry bacon until crisp, drain on paper towels. Drain fat from skillet, reserving 1 Tbs. Stir brown sugar and flour into grease in skillet. Add water, vinegar, salt, pepper. Cook, stirring frequently until mixture thickens, about 5 minutes. Add a pinch of caraway if desired.
Stir bacon and sauce mixture into hot cabbage in saucepan, heat through. Garnish with additional crispy fried bacon.
Can be made a day ahead of time. Refrigerate without putting extra bacon on top. Reheat in microwave, and top with additional bacon.
