  • 1 lb small dry navy beans
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 8 oz tomato sauce or V-8
  • 2 slices bacon, cut into pieces
  • dried red pepper flakes, to your liking
  • 1 bay leaf
  • Salt and pepper, to taste
  • Good size chunk of ham with bone in it
  • Ham broth in the jar, optional

Step 1


1. Soak the beans overnight covering the beans with plenty of water. In the morning, rinse the beans in cold water, picking out any shrunken ones or any beans that float to the top. Saute' the carrots, celery, and onion in a tablespoon of oil until slightly cooked. Put sauteed vegetables, drained beans, red pepper flakes, bacon and bay leaf in crockpot. Fill with water to within 2 inches of top, cover and set on high. Cook 6 to 8 hours or until beans are tender. Add tomato sauce or V-8 juice and more water, if needed. Season with salt and pepper. Let cook for 1 to 2 hours more.
