Ingredients
- 5.33 T (2/3 stick) unsalted butter, room temperature, plus more for pans
- 1.5 c all-purpose flour
- 1 t baking powder
- 1/2 t baking soda
- 1/4 c honey
- 1/2 c packed light brown sugar
- 1/2 t ground cinnamon
- 1/2 t salt
- 5 baby bananas or 1-2 bananas, roughly mashed (~3/4c)
- 1/2 t vanilla extract
- 1 large egg
- 1/2 c plain yogurt or sour cream
- 1 c walnuts, toasted & roughly chopped

Preparation
Step 1
1. Preheat oven to 350F & position rack in center. Lightly butter an 8.5"x4.5" loaf pan, set aside.
2. Sift together flour, baking powder & baking soda; set aside. Place butter, honey, sugar, cinnamon, & salt in the bowl of an electric mixer fitted w/a paddle attachment.
3. Beat on high speed until fluffy, ~5 min.
4. Scrape down sides of bowl, add bananas & vanilla, & beat on med speed until bananas are smashed, ~1 min.
5. Reduce speed to med-low.
6. Add egg & yogurt, mix until incorporated, ~10 sec.
7. Reduce speed to low.
8. Add flour mixture in 3 parts, mixing just until no traces of flour remain, ~10 sec; gently fold in walnuts.
9. Transfer batter to prepared pan; Spread level.
10. Bake 45-50 min, or until an inserted toothpick comes out clean.
11. Cool in pan 5 min; unmold & transfer to a rack to cool completely.
