Ingredients

  • Dry Mix:
  • 120 ml rolled oats or almonds for Paleo
  • 120 ml rolled almonds
  • 1 cup pitted dates
  • 1 cup natural sultanas
  • 1/4 cup sunflower seeds
  • 3/4 cup dried coconut
  • 1/2 cup walnuts
  • 1/4 to 1/3 cup coconut flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • zest from 1 fresh lemon
  • Wet Mix:
  • 2 eggs
  • 1 1/2 ripe bananas
  • 2 tbs coconut oil
  • 2 tbs honey or maple syrup
  • 1 tbs apple cider vinegar
  • 1 tsp vanilla paste
  • Streusel Topping:
  • 3 tbs dried coconut
  • 2 tbs rolled oats or almonds for Paleo
  • 2 tbs honey or rice syrup
  • 2 tbs coconut oil

Preparation

Step 1

Preheat oven to 170 degrees Celsius and line a loaf pan with non stick baking paper
Add the oats and almonds to a blender or food processor and blend until fine.
Add the dates and coconut to the same blender or food processor and blend until it is fine but not sticky then add to the ground oats and almonds.
Add the sultanas, sunflower seeds and walnuts to the same and blend until course then add to the rest of the dry ingredients.
Throw in the cinnamon, baking powder and zest then stir to until thoroughly combined. You may need to break it up and separate with your finger tips as some of the fruit tends to stick together.
Add the wet mix ingredients to the blender and blend until smooth then pout into the bowl with the fruit, oats and nut mix then fold through.
Spoon into the loaf pan and flatten the top with the spoon or spatula.
Add all of the streusel ingredients to the blender and blend until smooth and thick then spread over the unbaked loaf and place in the preheated oven to bake for 45-50 minutes or until a skewer comes out dry.
Allow loaf to cool before slicing and serving.
