Ingredients

  • 2 cup raw potatoes, sliced
  • 1 cup carrots, sliced
  • 1 med. onion, sliced
  • 2 tsp salt
  • 1 lb ground beef
  • 1/4 cup dry bread crumbs
  • 1 egg
  • 1/3 cup milk
  • 1/4 tsp thyme
  • 2 Tbs margarine
  • 1 can mushroom soup
  • 1/2 tsp paprika
  • 1 cup sour cream

Preparation

Step 1

1. Parboil potatoes, carrots, and onion in teaspoon of salt. Drain. Mix ground beef, egg, bread crumbs, milk, thyme, and remaining salt. Shape into balls. Brown in oleo in frying pan. Remove and drain. Pour all drippings from pan. Stir soup, sour cream, and paprika into frying pan. Heat, stirring constantly until hot. Pour half of vegetables, then meat balls and soup mixture into a baking dish. Top with remaining vegetables. Cover and bake at 375 degrees for 30 minutes.
